Monday, February 16, 2015. It goes by SO fast! My youngest is in college already and yesterday he was 3 weeks old! Back in 2013. Because time really does fly past, and suddenly your in the future, and your not even sure how you got there. It has been almost a year since she arrived. Since I watched my abdomen swell and my body change. A year since I craved nothing but bagels and pasta with mushroom sauce. A year since I spent any moment alone.
Dallas will be in the rear view next week. Using creativity to slim down the cabinet inventory, I surprised myself even! The lentils and mushrooms give hearty strong flavor, letting the kale be less intense but nutrient packed. Tear the kale into pieces, removing the stems. Chop the bell pepper very fine. Fresh tomato would have worked just as well, but I had a can of Fire Roasted Tomatoes on hand. This is a quick recipe! 1 lb cooked lentils.

Soon after this I sent my forms into AustSwim so they could sign me off as a qualified Teacher of Swimming and Water Safety. Then in February I started Certificate IV in Business Administration! Throughout the year I have been driving, working on getting down the 120 hours of experience necessary to have before taking the P plate test.
