What to do with All That Basil. July 21, 2008. Its been a while since we posted. For anyone who grows fresh basil, you know that it sprouts like a WEED! My very first foray into savory tart making, I found this to be much easier than I thought! 1 12 pounds medium yellow tomatoes, cut into 14-inch-thick slices. 1 12 pounds medium red tomatoes, cut into 14-inch-thick slices. 1 12 teaspoons salt, divided. 1 cup fresh corn kernels about 2 ears. 1 tablespoon fresh lemon juice. 14 cup yellow cornmeal.
