The site had the following in the homepage, "And everyone else too! Product Review-Lucys Sugar Cookies." I noticed that the web site stated " These cookies are GFCF, Peanut, Egg and Tree Nut Free." They also stated " I was a bit thrown when I saw oats on the ingredient list but apparently they are certified GF oats. These cookies are very good! Crunchy and not at all grainy with a nice flavor. Easily identified as a sugar cookie and not noticably GFCF in fact! 4 some confusion due to oats and other ingredients that might be hard to identify as GFCF. 5 Very good tast and texture."ANALYZE MORE BUSINESSES

They reminded me of oatmeal cookies in a way, but chewier. I want to play around with this recipe a bit, even though I thought they were quite good. Next time I want to replace the baking soda with baking powder-for a fluffier cookie.

Beat cold butter until smooth. Add sugar and beat until creamed. Stir in egg just until combined. Add flour mixture to butter and mix together until it forms into a ball. Place dough in plastic bag and place in freezer for 15 minutes.
