For the soup course, I used the beef shoulder, kidney beans, carrots, leeks, shallots, red wine, horseradish, and paprika from our ingredient list. I also supplemented with a few other dried spices and water. 1 Cut the roast into chunks. 2 Make a spice rub with paprika, cumin, turmeric, pepper, ginger. Then coat the chunks of meat with the spice rub. 3 Brown the meat in olive oil in a soup pot.

Saturday, August 17, 2013. See you later, Uganda. Well I now write this post to you from the Amsterdam airport. I am halfway through my flight back home to Florida. With my six-hour layover, I have some time to attempt to compile my thoughts into a blog post. Words cannot describe how incredible it has been returning to Uganda. I just want to thank everyone again who has supported me, both financially and with your prayers throughout this trip.

Saturday night and the house so often filled with voices and movement is still,. A mirror of my mind, quiet, at ease. I was so angry, then afraid, then sad when the dates for travel changed. Angry at the mistake others made, impacting me and my family, and our little girl now moved to the orphanage waiting our meeting day. Afraid of what the change meant, how schedules would need to be adjusted, plans updated, tickets, hotel rooms, appointments. I took a deep breath and stopped. Sweet, darling girl! .
