Saturday, July 18, 2009. This is a great toss together meal that uses vegetables that you have on hand. I often use vegetable stock to make it more like soup but this time around I felt like stew. Just clean and cut the vegetables in bite sized pieces. Arrange in a deep baking dish and combine with tomato sauce. Just whatever spices you like. Cover baking dish and bake until vegetables are tender.
