Posted on February 12, 2016. Took most of the afternoon but I managed to make some triple cooked chips from the Heston at Home book. Think I overdid the first stage where you simmer them a bit, next time will be a bit more gentle and do that stage for a shorter time - I lost quite a lot of the chips at that stage as they were falling apart.
