Hong Kong, January to June. Monday, June 27, 2011. The Last Two Months and Home. I have been back in the United States safe and sound, though jet-lagged and car-less. Being home feels different in many ways, but I will talk about that later. When back in Hong Kong, we had a testimony-sharing time and a small graduation ceremony for us students. Our potatoes come from local, family-owned farms from the Great Northwest. They work very hard growing our potatoes. Multiple truck deliveries are made each day. Each truck carries up to 56,000 pounds. Production begins at the peeling line where the potatoes are inspected, washed and lightly peeled. The finished packages are hand packed with care into corrugated boxes.
