Yummy, scrummy, in our tummies! My Ramadan favourite dessert as its light and refreshing. My mum makes this plain but I added a touch of colour so I get my kids to eat it! 3tbsp sooji fine semolina. 1-2drops of red food colouring. Mix the semolina in a little milk to a thick smooth paste so no lumps form leave aside. Boil the rest of the milk in a pan. Add sugar and food colour and stir. Bring to boil and add the semolina paste and mix.
2 tbs good-quality low-fat mayonnaise. 1 tbs low-fat Greek yoghurt. 1 tbs lemon juice, plus lemon wedges to serve. 18 small cooked prawns, peeled, deveined.
