The other night, as I made cashew cheese for our calzones, I had a good amount leftover and wanted to use it instead of putting it in the fridge. I thought it would be a great way to use up some mushrooms that needed to be eaten. I stuffed them with the leftover cashew cheese, basil, artichokes, olives, hemp seeds, salt, and pepper.
